HY California is the somewhat-eponymous casual option of Celebrity Chef Hide Yamamoto at Marina Bay Sands, Singapore. The Rainbow roll (Foreground, SGD$10 – Fatty tuna, salmon, amberjack) was the best among those we sampled that night. The New Yorker (Right, SGD$8 – sausage, cheese, mustard) came a close second. Sadly, the Yam and Pickled Plum maki (left) was a complete letdown. The plum preserve was overpowering – almost like a sourbomb gone wrong. As you can probably tell, bring either a small appetite or a fat wallet.
Impromptu review aside, I’m usually no good with food photography. I lack the patience to set up a frame while food is beckoning, as well as the audacity to imperiously forbid everyone at the table from tucking in while I snap away.
